What is “Slow Food”?

Slow Food (slow food), is a movement that was born by Carlo Petrini in 1986, as a protest against the implementation of a fast food restaurant in Bra (Italy) and the promotion of the “Fast Food” and “Fast Live” effects. ; destroying healthy lifestyle habits both in our diet and in our lifestyle in general.

This movement identified by a snail (emblem of slowness) that represents a gastronomic concept that deals with: return to traditional cuisine, defend traditional productions and cultivation techniques, protect plant and animal species in danger of extinction, recover the flavors of a lifetime and eat food at its best; where they have the exact point of maturation, preserving all their flavor and aroma.

He also defends the ecological agriculture, because it is low-impact agriculture for the environment, in which no chemicals or genetically modified organisms are used.

Slow Food It is based on a Mediterranean diet that promotes a slower life, based on savoring every moment, consuming organic and natural foods of high nutritional quality such as legumes, pasta, meats, fish, fruits and vegetables.

In addition, it adds other very important concepts such as slow chewing and adequate food; promoting a meal buena for its flavor and aroma; clean for its respect for the environment, ecosystem and biodiversity; and fair because it provides sustainable income and fair working conditions.

Currently, the movement has been expanding, and today It is present in more than 130 countries of the five continents. In 2004, FAO officially recognized Slow Food as a non-profit organization and established a collaborative relationship with it.

Although our daily life is based on a lack of time, we cannot give up Slow Food. A philosophy of life, which has an impact on its quality and the health of those who practice it, and is still the way of eating that we have had all our lives.
