Flat breads are those in which the dough is spread in a similar way to pancakes and can be filled with the ingredients you prefer.
In our case we have chosen fresh chorizo, feta cheese and yogurt and we can assure you that it is to die for.
Take note of the recipe because you have to try it no matter what.
🐷 INGREDIENTS: (for 10 loaves)
- 1 string of fresh organic chorizo.
- 500 g of strong flour.
- 300 ml of warm water.
- 30 ml of olive oil.
- 10 g of fresh yeast.
- Sal.
- 1 red onion.
- 4 tablespoons of sherry vinegar.
- 1 tablespoon of sugar.
- 300 g of Greek yogurt.
- 100 g of Feta cheese.
- The juice of ½ lemon.
- 1 clove garlic.
- Parsley.
- Sal.
🧑🍳 PREPARATION:
1.- We start by preparing the bread dough since it must rest for 1 hour.
2.- In a large bowl we dilute the yeast in the warm water, salt it and add the oil and flour.
3.- We stir at first with a spatula or wooden spoon to mix and then we take it to the table to knead comfortably and form a ball.
4.- We reserve, covered with a cloth, until it doubles in size.
5.- Cut the onion into thin slices and marinate with sherry vinegar and sugar. It will be ready in ½ hour. You will see the onion turn pink.
6.- Prepare the Feta yogurt sauce by mixing the yogurt with the crumbled cheese, the very finely chopped garlic, a pinch of salt and the juice of 1/2 lemon and place in the refrigerator.
7.- We make the breads by taking small portions and giving them a flat and elongated shape, sinking the center with our fingers (so that it contains the filling better).
8.- We make the bread in a frying pan back and forth. (2/3 min per side) over medium heat.
9.- We take out the meat of the chorizo and fry it in a thread of oil, crushing it with a fork so that it remains in small pieces.
10.- Assemble the breads by placing the chorizo first, then the onion, a few points of Feta yogurt sauce and a little chopped parsley.
Tips: If when kneading the bread it sticks too much to your hands, add a little more flour. Grease the pan with a brush before placing the loaves in the pan to prevent the dough from eventually sticking.
