- Ingredients: organic Duroc pork ham and salt. All from agriculture and livestock with organic certification.
- Healing: 20 months minimum.
- Elaboration: The hams are cut up and massaged one by one. They are then cold salted and slowly cured in our cold dryers.
TASTING NOTES:
- Aspect: unbeatable appearance, with good shape and excellent tone. Due to the free-ranging of our animals, the slice has good infiltration and distribution of fat and the meat has a bright color with intense toasted tones, obtained during curing.
- Aroma: very aromatic, with an excellent point of salt and a juicy and very consistent texture.
- Flavor: Its flavor is intense, with notes of aromatic herbs and sweet flavors with hints of honey. It has a very pleasant and persistent aftertaste.
